【蠔油鮮冬菇燜雞翼】食譜
食材
雞中翼 6 隻
鮮香菇 4 朵
蒜頭 5 瓣
紅蔥頭 3 顆
薑片 幾片
蔥白段 適量
雞翼醃料
豉油 1 湯匙
蠔油 1 湯匙
麻油 1 茶匙
鹽 適量
胡椒粉 適量
調味料
豉油 半茶匙
老抽 1湯匙
蠔油 1 湯匙
米酒 半湯匙
糖 半茶匙
熱水 半杯
步驟:
1. 將冰鮮雞翼解凍,清洗乾淨後用廚房紙吸乾水份
2. 加入豉油、蠔油、麻油、鹽 、胡椒粉醃製雞翼約30分鐘
3. 先預熱鐵鍋,微微冒煙再將醃好的雞翼小火慢煎至金黃色,這樣有助鎖住肉汁
4. 雞翼2面煎至金黃色就可以盛起備用
5. 調至中火,加入蒜頭、紅蔥頭、薑片及蔥白段爆香,最後加入鮮香菇及雞翼
6. 加入蠔油、豉油、老抽、糖及熱水,攪伴均勻蓋上鍋蓋待
7. 維持中小火,燜煮至醬汁濃稠就完成。
賀年菜不一定要烹調華麗菜式,

Braised Chicken Wings
6 chicken wings
4 fresh mushrooms
5 cloves garlic
3 shallots
A few slices ginger
Some white parts of green onion (cut into sections)
Marinade chicken wings
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
Salt
White pepper
Seasoning
1/2 teaspoon light soy sauce
1 tablespoon dark soy sauce
1 tablespoon oyster sauce
1/2 teaspoon sugar
1/2 cup hot water
1. Thaw the frozen chicken wings, rinse well, then completely dry with kitchen paper.
2. Add light soy sauce, oyster sauce, sesame oil, salt and pepper, and marinate the chicken wings for about 30 minutes.
3. Preheat an iron pan until it just starts to smoke slightly, then pan‑sear the marinated wings over low heat until golden brown to sauce.
4. When both sides are golden, set aside.
5. Turn to medium heat, add garlic, shallots, ginger slices and the white spring onion sections, stir fry, then add the fresh mushrooms and the chicken wings.
6. Add oyster sauce, light soy sauce, dark soy sauce, sugar and hot water, stir well to combine, then cover with a lid.
7. Simmer over medium‑low heat until the sauce reduces and thickens to a glossy consistency, then serve.
